Changing birthday/New Email

Hi, I was just wondering how I can change my birthday to October 11? It is my birth month and wanted to redeem a gift but I forgot I had just put a random date. Also I wanted to change my email but I had an old account that used it so I just closed that account. But when I try to use that same email for my current account it gives me an error saying it’s still being used. Can I get help please? Thank you
