Hello there, ladies and gents!
Keeping in line with all the fun and interactive threads asking about your most recent halls, items you have your eyes on, what you're currently wearing, what's your hair routine, and more, I've decide to branch out and ask:
"What's on your plate?"
The beauty world doesn't just stop at skin care and cosmetics, it also goes hand in hand with your overall health and well-being, so with that, I'm curious to see what we're all chowing down and snacking on be it for breakfast, lunch, dinner, dessert, or inbetween!
For those with apps that help count calories or to those who just want to keep a log, here's a place to share, possibly find and share some recipes, and even tips on maintaining a balanced diet.
Don't just share food items, but even drinks! I'm a huge fan of tea and at least have a cup of green tea a day (anti-oxidants) and drink plenty of water.
For lunch today, I had:
-Brown rice
-Steamed egg
-Steamed red snapper with green onion, sesame oil, and black pepper
-Gai lan (it's a type of Chinese vegetable/greens)

Spinach Frittata and chopped salad. I added a little black truffle oil to the salad before I tossed it up.
Mmm, that spinach frittata looks so yummy! It makes me think of the spinach-quiche tortilla pie thing I made! What all did you put in yours?
Spinach, shallot, portabella, yellow bell pepper, Herbes de Provence, a touch of garlic And 3 shakes of chipotle tabasco. I did not have much shredded mozzarella but that's browned on top. No crust, I do mine on stove top in a big nonstick skillet, sautee things, add 16 beaten, strained eggs then gently fold in large curds until 1/2 set, then top with the cheese and finish in the oven for 10 min, it's fast. I make the salad while it's baking. 8 servings, 20 min to table.
Sweet Spanish Paprika and Ancho Chili blend sprinkled over. Sauce is Country Dijon+half and half seasoned with onion and garlic powder. One of my endless variations of baked 'Fish in a Dish'.

I was too hungry to take a picture, but I made am awesome roasted chicken, cornbread stuffing, green beans and gravy (from scratch). It was sooooooo good. Now I'm assembling recipes and starting my shopping list for Thanksgiving. 🙂

It was pretty good. I just found a recipe for the Pioneer Woman's stuffing in my Food Network magazine that I'm going to try for Thanksgiving. It has cornbread, French bread and ciabatta bread. Mmmmmmm .
I was in a hurry coming in from the VIB sale today and late for lunch. Another chopped salad, this time power greens and romaine, topped with some quickly defrosted large shrimp tossed in Yumyum sauce spiked with chipotle Tabasco and dusted with smoked Spanish paprika. Yumyum indeed!
Here are two dinners I've made this past week. The top is my take on a super easy, chicken shepherd's pie and the below is this spinach quiche-pie dish.
The shepherd's pie was:
-Bag of frozen broccoli, cauliflower, carrots
-Half bag of frozen peas
-10 oz can of condensed cream of chicken soup
-Salt, pepper (to taste)
-Cooked, cubed chicken (used two breasts that were butterflied)
-4 medium red potatoes, cubed and boiled
-Cheese blend
-Splash of milk and butter (for potato mashing)
Preheat oven to 400, in baking pan, add in cooked chicken, frozen veggies, and portion of cooked potatoes, add in soup and salt/pepper, mix up until coated evenly. Mash rest of potatoes, adding in milk, butter, salt/pepper to taste, add on top of mix in pan and spread evenly to cover. Top with shredded cheese (your choice), bake for 20 minutes!
The spinach quiche-pie is (feel free to sub in the meats/more veggies, I just went the pig route for this one):
-6 large eggs, beaten
-Spinach
-Mushroom (cut into pieces)
-Proscuitto
-Pepperoni (cut into pieces)
-Smoked ham (cut into pieces)
-Lemon pepper (or just salt/pepper, or whatever seasonings you want to add)
-Large tortilla (should cover the base of your round baking pan/dish)
-Shredded cheese (your choice)
Heat the oven to 350, lay one tortilla at the base of the round baking dish (this will prevent the need to grease the pan), lay down a light layer of spinach, combine seasonings and beaten egg together and whisk, add in mushroom and prosciutto/ham/pepperoni to the egg mix, pour nearly all over the spinach, layer another round of spinach, pour rest of egg mixture, top with cheese, bake for 20-30 minutes.
I made something similar to your shepherds pie this week. We had a ham steak, so I mashed cauliflower with one potato, can of cream of potato soup, frozen peas, garlic & the chopped up ham steak. I lined the dish with tortilla crumbs (from a can, breadcrumb replacement) and topped it with the tortilla crumbs & some shredded cheese.
Cold weather = comfort casserole meals mmmmm

Oh I wanted to share the amazing Mole dinner my mom made. Well I don't have pics, but she made it for me with steak. So amazing.
You cut up the steak into strips and smear Mole on your tortilla with the steak in the middle and you eat like a taco. With her delicious gold rice.
This weekend she is making tamales. GAH another favorite.

Lazy chopped salad, look at that seedy cuke! But still yummy. 10 raspberries every day because they look so pretty in the big trays lately.
Tonight I had chopped salad. Romaine, cucumber, orange bell pepper, portobello mushrooms and herbes de Provence. Smoked turkey, avocado slices and shredded mozerella on top, Green Goddess drizzled over. A handful of pistachios after. Very filling, oof!
