What's on your plate?

Hello there, ladies and gents!

 

Keeping in line with all the fun and interactive threads asking about your most recent halls, items you have your eyes on, what you're currently wearing, what's your hair routine, and more, I've decide to branch out and ask:

 

"What's on your plate?"

 

The beauty world doesn't just stop at skin care and cosmetics, it also goes hand in hand with your overall health and well-being, so with that, I'm curious to see what we're all chowing down and snacking on be it for breakfast, lunch, dinner, dessert, or inbetween!

 

For those with apps that help count calories or to those who just want to keep a log, here's a place to share, possibly find and share some recipes, and even tips on maintaining a balanced diet.

 

Don't just share food items, but even drinks! I'm a huge fan of tea and at least have a cup of green tea a day (anti-oxidants) and drink plenty of water.

 

For lunch today, I had:

 

-Brown rice

-Steamed egg

-Steamed red snapper with green onion, sesame oil, and black pepper

-Gai lan (it's a type of Chinese vegetable/greens)

 

Now, tell me, Beauty Talk world, what do you have? 😄

Food Network sheet pan lasagna. Much easier than the regular version.

@CynthieLu  For me, it was easier because in order to make this, you break the lasagna noodles into about 4 pieces (no rules here!)  then you boil them.  I have tried so many ways to cook the noodles; flat in a large container with boiling water poured over and soaked (which actually works but is time-consuming,) boiling them and draining, but they all break or stick together.  I was surprised that these noodles just boiled for 4 minutes, and it was fine!  And these were regular lasagna noodles, not the no-boil kind.

 

So, you mix the noodles with 2x 28 oz. jars of sauce, meat, and one cup of parmesan (I also added sauteed mushrooms and zucchini, and threw in a couple of handfuls of fresh spinach hand-torn, and a cup of pasta water.

 

Put that into a sheet pan,"dollop" the ricotta wherever you want it to go, and then top with provolone or mozzarella and more parmesan cheese. Bake at 400 until you like how brown it is.

 

What I really liked about this in addition to the ease is I could really taste the ricotta instead of having it getting mixed with everything else in the casserole.

Thank you for taking the time to share @Ispend2much6, 🙏 breaking the noodles up does sound much easier than working with the big pieces.  I like the way you describe it, the ricotta cheese being able to shine in this dish sounds so good!

Summer is coming in fast!

potatoes, onions, peppers and eggs for future breakfasts. It’s not pretty but it’s tasty.

A riff on Lidia Bastianich’s Stuffed Eggplant Pugliese- mine is unstuffed and sans cheese and tasty anyway. Her recipes work!

Sautéed Summer Squash with Red Pepper and Onion made into a gratin with rice, eggs, milk, and two packages of Trader Joe’s Unexpected Cheddar Cheese.

Roasted eggplant pasta by Alison Roman.

I used one softball sized eggplant and 1/2 pound of pasta.

I really enjoy dishes with eggplant @Ispend2much6 . Fresh from your garden, that's a treat. 💜 Yum!

I don't cook with it much, but I remember being told you can use salt to cut the bitterness but I haven't tried it. I tend to enjoy it when it's prepared for me. 😊

We’re doing home renovations, and I performed a culinary experiment in desperation of concocting a quick lunch food.

I mixed tuna, hard boiled eggs, lots of celery, lemon juice, and Marie’s ranch dressing. It’s different and good. If I still had dill in the garden and chives I would have used those also.

Hot 🥵 summer…perfect for a popsicle… introducing home made plum popsicles. Our Santa Rosa plum tree made way too much plums. We gave away, eat, bake… and I finally made juice and popsicles and it was a hit

I also love different kinds of ice cream and popsicles in the summer, although I don't eat them often. 

Now I'm more focused on reducing sugar in my body, so I try to eat foods with low or no sugar. In addition, I recently found a useful resource Pharmacy B2B   through which I learn a lot of useful and, most importantly, necessary information.
