What's on your plate?

Hello there, ladies and gents!


Keeping in line with all the fun and interactive threads asking about your most recent halls, items you have your eyes on, what you're currently wearing, what's your hair routine, and more, I've decide to branch out and ask:


"What's on your plate?"


The beauty world doesn't just stop at skin care and cosmetics, it also goes hand in hand with your overall health and well-being, so with that, I'm curious to see what we're all chowing down and snacking on be it for breakfast, lunch, dinner, dessert, or inbetween!


For those with apps that help count calories or to those who just want to keep a log, here's a place to share, possibly find and share some recipes, and even tips on maintaining a balanced diet.


Don't just share food items, but even drinks! I'm a huge fan of tea and at least have a cup of green tea a day (anti-oxidants) and drink plenty of water.


For lunch today, I had:


-Brown rice

-Steamed egg

-Steamed red snapper with green onion, sesame oil, and black pepper

-Gai lan (it's a type of Chinese vegetable/greens)

@lylysa thanks! My mom cooks so much authentic mexican food. Some I eat, some I can't lol
I have to remember to do so.
She makes pork chile one's and then pineapple one's as a dessert, I am drooling now.

Tonight I had chopped salad. Romaine, cucumber, orange bell pepper,  portobello mushrooms and herbes de Provence. Smoked turkey, avocado slices and shredded mozerella on top, Green Goddess drizzled over. A handful of pistachios after. Very filling, oof!

Cottage cheese with shiso furikake and masago. Sounds odd, tastes yum Smiley Wink

For some strange reason I've been addicted to carrot juice and has been buying a large bottle every time I go grocery shopping. I've also found a way to combine healthy and delicious. Boiled oats + chia seeds, then when it cools combine with ice cream. Oats milkshake? yummy


Haven't had time to really cook, so I've been boiling frozen dumplings in water + tomato and top it off with a bit of cilantro. Or spring mix salad + sunnyside up eggs.

tonight i made a roux to thicken the chicken soup i made on sunday night into more of a chowder, added a pint of heavy cream and some corn and put it in a casserole dish topped with garlic cheddar biscuit batter and baked it in the oven Smiley Happy and i STILL have about a gallon of leftover soup haha. but man, it was SO good Smiley Very Happy i need to find at least one more creative way to use up these leftovers haha. we're probably going to be eating it in some form or other for the rest of the week hahaha

~ Healthy Baked Chicken Nuggets:

- Organic Chicken Breasts cut into pieces

- Whole Wheat Flour

- Egg Whites

- "Just the Crumbs" (mix of quinoa, brown rice, flax & seasame), but didn't have enough so I added Tortilla Crumbs, Cheddar Cheese, Smoked Paprika & Celery Salt

- Baked at 350 for 25 min


~ Arugula Salad with Warm Dressing

- Caramelized Red Onion

- Mushroom

- Garlic 

- Soy Sauce

- Balsamic Vinegar

- Chardonay Mustard

- Black Truffle Oil 

- Topped with shaved romano 


Sounds complicated, but really easy to make. The warm dressing is my favorite way to eat Arugula.

My friend made some with the use of crushed up baked BBQ Lays chips that we dipped in various sauces for a crunchy take on BBQ.

yesterday i made chocolate banana bread.


tonight i cooked up some green beans fresh from the farm with a little bit of butter and saffron, garlic mashed potatoes, meatloaf and potato rolls. the rolls kind of ruined the whole fresh made vibe, i had to send my boyfriend out last minute to grab some because i didn't have the energy to make biscuits from scratch and i am no good with yeast, so i don't make bread. that's something i plan on tackling one of these days, though! 


i also bought a bunch of peaches for some peach butter, and some pumpkin for chocolate pumpkin bread! i'm just going to sub the pumpkin for the banana in the same recipe i used yesterday Smiley Very Happy 


tomorrow night my daughter will be at her dad's and my boyfriend at school so it's just going to be the baby and i... lazy night in the kitchen for me Smiley Happy i'll probably eat some frozen trader joe's pasta haha.

I'm excited about today's lunch, yes pizza again lol

It's Italian beef with giardiniera peppers. So delicious.


I am craving deep fried bacon wrapped pickles.

Oh, this has me wanting pizza, too.  And fried pickles, but thin, crispy chips of fried pickles.  Mmmmm...

Ate lunch early today 'cause I was hungry.  A good sized helping of chicken & rice, leftover from Monday's dinner!  Easy-peasy to make, just cube some cooked chicken, mix it with uncooked rice, peas, onions, and the amount of liquid you would need to cook the uncooked rice, only instead of water, we're using chicken broth.  Cook it like you do regular rice, and you've got a tasty, one-pot dish!
