Don't laugh, I'm obsessed with Rachel Zoe's hair. How do I get the beachy, wavy, look with a curling iron? I've seen her hair guy do it on the show, and he has some special flipping technique. Anybody know what it is?

So, The other posts are about the products used to get this look, but they forgot to really describe how to get this look.
I am obsessed with this look as well, I use it daily! (When I don't have swim practice in the morning; Which, by the way, kills my hair.)
I would recommend a small to medium barrell curling iron, preferably 1".
Start off by slow-blowdrying your hair on medium heat, without using your fingers to tousle through.
When you use your fingers, it causes frizz.
Once your haed is dry, I use a smoothing serum, such as Super Skinny Smoothing Serum by Paul Mitchell (works miracles!)
After this, divide your hair into two (or more) sections. Start off with a small chunck of hair; Rolling it around the barrel of the curling iron.
Continue to twist the barrel around the hair; This will really define the long waves.
After you've completed this with all your hair, take a small round brush and lossen up the curls.
Finish off with a flexible hairspray (One infused with Bamboo, smell and work, great!)

The GHD Pro Styler is good for curling hair. It's a mutlipurpose iron so it creates loose, wavy curls like Rachel Zoe's. There are a bunch of videos on youtube showing how to get the look, you should check 'em out.

Hmmm ... unfortunately I'm not familiar with the flipping technique you're referring to, but I have heard that the Sultra Bombshell is the best for creating curls and waves.
