How do I make my hair stay straight after I flatiron it, or curly after I curl it?

Whenever I use a curling iron or flatiron my hair looks good for about 30 minutes then my hair gets wavy again or the curls start to come out. I'm wondering if there is something besides hairspray to make it stay straight or curly.
